Starting Saturday evening, June 21, 2025, our Chef invites you to discover a refined menu designed to showcase the full subtlety and richness of this noble crustacean. A three-course composition, where every dish celebrates a perfect balance of flavors and masterful technique.
Lobster Menu
To begin
Amber jelly,
lobster claws and knuckles suspended within,
chilled trumpet zucchini velouté infused with Viking salt,
delicate strips of Iberian ham and Sologne caviar.
Then
Grilled lobster tail with semi-salted butter,
Thermidor sauce,
a symphony of summer vegetables in jardinière style,
and young spinach shoots with toasted hazelnuts.
