Caesar's beef tartare and Mediterranean red tuna,
arugula and crunchy radishes.
Iced tomato soup: stracciatella, fennel stalks, Cremona mustard,
Parmesan shavings, frosted raspberries, a slice of roasted tomato.
Bouchot mussel marinière and mackerel saupiquet,
oyster glaze, green vegetables.
Red mullet terrine with saffron, artichokes with pine nuts ;
Rouille sauce.

Squid rings with basil, Stiletto eggplant.
Mediterranean fish of the day poached in CastelaS olive oil.
