Starting with dinner on Thursday May 25, 2023, Villa Saint-Ange and its restaurant Âma Terra invite you to discover their new seasonal menu.
Created in the kitchens of the Âma Terra restaurant, the menu is fresh and light, made with fresh, seasonal produce.
Let yourself be guided by its unique combinations, creating a gourmet journey between the land of Provence and Mediterranean flavors.

Lunches & Dinners
Starters
Charolais beef tartar, duck foie gras and sorrel ice cream, melon brunoise.
Red tuna crudo lacquered with soy caramel,
potato cultivator with blackcurrant white wine; artichoke salad with peppermint and pine nuts.
Cévennes sweet onions and chops of chard with Rancio, flat raviole with turmeric, brousse du Rove.
Shellfish marinière with mackerel jelly, chickpea purée; green vegetables.
Dishes
Fish of the day poached in olive oil, grilled spring vegetables.
Red mullet soup.
Thin tart of sea bream, broad beans and peas with Bigorre bacon;
octopus daube with Vacqueyras.
Challans duck aiguillettes from Maison Burgaux, cherry bigarade ;
pointed cabbage and turnips.
Piece of veal fillet rubbed with oregano, sautoir-roasted; braised lettuce velouté, baby carrots.

Desserts
Local strawberries / poppy chantilly, lemon meringue.
Strawberry syrup and sorbet.
Raspberries and red peppers with saffron, fromage blanc / mascarpone ice cream.
