Called Âma Terra or “Soul of the Earth” and created by Pierre Gagnaire, the restaurant aims to showcase the incredible culinary treasures which Provence’s fertile earth has to offer. Quality ingredients are combined to create balanced, sophisticated and unique dishes with real soul.
The Âma Terra restaurant serves vibrant Mediterranean-inspired cuisine, made with fresh and seasonal ingredients by the talented Jean-Denis Le Bras, Âma Terra’s executive chef, working closely with local producers.
On sunny days, take advantage of the large terrace which looks out on the restaurant’s delightful Provençal garden. Admire the poetic beauty of the flowered gazebo and ponds, enjoy the relaxing sound of the fountains, breathe in the fragrant scent of lavender and wisteria: this typically French setting is the ultimate venue in which to unwind beneath the clear blue sky of Aix-en-Provence.

Enjoy a meal with an endlessly changing view in the beautiful Second Empire conservatory. With its winter garden feel, this room is bathed in light and boasts wonderful views of the garden outside.
Take a seat in one of the restaurant’s cabriolet armchairs at an immaculately laid table, showcasing elegant and delicate crockery, glassware and metalwork. Decorated with crystal chandeliers, this dining room is a wonderfully sophisticated setting.
In the centre of Aix-en-Provence, just moments from Cours Mirabeau and yet worlds apart from the hustle and bustle of everyday life, the restaurant is hidden away in 8,000 m² of tree-filled grounds with a decidedly sophisticated and typically French feel in the heart of Provence.
By the pool: from midday to 10 p.m., Âma Terra serves an exclusive menu for guests at the 5-star hotel Villa Saint-Ange. Every dish is light, freshly prepared, fragrant and made using quality and seasonal ingredients: steak tartare, gazpacho, tomato and burrata salad and more.
